Fundamentals of Consumer Food Safety and Preservation is an extensive revision of the Food Safety Advisor Volunteer Handbook (EM4895, 2003). Since the last update, new and updated consumer food safety information has become available, and consumer interest in food safety and home food preservation has increased. Consumers have an interest in locally grown foods obtained via home gardens and farmers markets. They are also concerned about how their food is processed. This manual is written for a wider audience, as well as those participating in Extension food safety and preservation programs, including volunteer training. Chapters cover basic food preservation, foodborne illnesses and prevention, canning and preserving different types of food, cold storage, smoking food, and emergency preparedness.
